Introduction
A foodborne outbreak can be defined as two or more people becoming ill from ingestion of the same food. With large-scale food manufacture and the associated distribution of foods, outbreaks can take on huge proportions. For example, in 1985 a Salmonella outbreak associated with milk from Hill Dairy is estimated to have sickened approximately 200,000 people in the United States.
Because of the large number of people who can potentially be affected in foodborne outbreaks, considerable effort has been invested into developing tools for outbreak investigation. Researchers now have a variety of both proactive and reactive methods for tracing outbreaks. The aim of this assessment is to increase you awareness of some of the most significant global foodborne illness outbreaks in recent history, as well as the techniques investigators use to track and trace them.
Purpose
To prepare an oral presentation and role-play describing an actual foodborne microbiological disease outbreak including the methodologies used in tracing the outbreak. The aim is to understand the disease burden and cost associated with an outbreak, as well as the root cause and investigation technique. Moreover, the assessment task asks students to consider the impact of an outbreak on the many different stakeholders involved.
Description
Students will work in pairs for this assessment task. Each group must first choose one foodborne microbiological disease outbreak from the list at the end of this document. The list contains details of selected foodborne outbreaks which have occurred throughout the world. Each outbreak is particularly significant in its own way. Once you have made your selection, please let me know what it is. Note: each outbreak will be presented by only one student group. Allocation of the outbreaks is on a “first-come, first-served” basis. The outbreak list I have provided is not an exhaustive one. Should you wish to present an outbreak which is not on this list (maybe you were infected in one, and it is close to your heart, for example) please discuss it with you lecturer prior to Friday March 19th, 2021.
