As you know very well from the study of thermodynamics, the specific heat of a substance is defined as the energy required to raise its temperature by one degree, per unit mass. I usually tell students that it would be better called energy capacity, as a way to remember it better and to distinguish the language of thermodynamics a litle more precisely.
If a substance is nearly incompressible (solid or liquid), we do not have to worry about any volume changes and thus boundary work being performed. This means that all solid and liquid processes can be considered constant volume, and we simply use a single value for the specific heat. The specific heat capacity of a solid or liquid then is simply the change of its internal energy per change in temperature, or stated as an equation;
